Casa Manolo

If you don’t know Manolo Barahona, don’t hesitate to visit his restaurant in Ses Salines, he is well worth a visit. He is a television producer and a great communicator, and he cooks wonderfully. Above all, seafood. His squid cooked on the griddle with cuttlefish ink is a delight. You can also try the famous ‘arroz de notario’, made with a fumet of eleven varieties of fish, sea snails, cuttlefish with its ink and lobster, and the caldereta de bogavante cooked with rock fish and salt fish: sea bass, snapper, déntol, sea bass? Pure sea!
