Here is the recipe for paparajotes, a typical sweet from Murcia

If you don't know the traditional Murcian dessert, here we bring you this peculiar recipe that is made by covering a lemon leaf with a pastry.

If you want to discover some typical desserts from different regions of Spain, today we bring you a sweet from Murcia which is also very easy to prepare and delicious. They are called paparajotes and their main ingredient is lemon. In fact, they are cooked with a lemon tree leaf covered in a dough made with flour, milk, eggs, cinnamon and, of course, lemon. Introduced in Murcia by the Arabs, it is typical to eat this dessert in March, with the arrival of spring, but also during the September Fair. Paparajotes are usually accompanied by a good glass of sweet wine or mistela.

Recipe for Murcian paparajotes

Ingredients:

  • 600 g wheat flour
  • 200 ml water
  • 200 ml milk
  • zest of lime
  • 200 g sugar
  • 3 eggs
  • Cinnamon
  • Lemon tree leaves
  • Olive oil
  • 1 sachet of yeast
  • 1 pinch of salt

Preparation:

  • In a bowl, beat the eggs and then add a pinch of salt, the lemon zest, the milk, the yeast and stir well until completely mixed.
  • Gradually add the flour while continuing to whisk the mixture, until you get a consistent dough, neither too thick nor too runny.
  • In a frying pan, heat a good amount of olive oil.
  • Wash the lemon leaves and, one by one, dip them into the mixture until they are well coated.
  • Place the paparajotes in the frying pan and turn them over so that they brown well.
  • Meanwhile, in a bowl, mix the sugar and cinnamon.
  • When the paparajotes are cooked, place them on a plate with paper towels to remove the excess oil. Pour the sugar and cinnamon mixture over them. You can decorate the dish with some orange blossom flowers.
  • And remember to point out that the lemon leaf is not to be eaten.
