Cédric Grolet has been considered one of the best and most creative pastry chefs in the world for several years now. He constantly shares his new and beautiful sweet creations on his networks. And it is common for him to play with the appearance of his desserts, giving them a shape that deceives the eye by making it seem that it is another food (although that product is almost always present on the plate). His series of fruits or flowers are very famous. We have compiled 13 of Cédric Grolet’s most iconic desserts that will leave you mesmerized!

Lemon flowers

A flowery reinterpretation of the lemon tart. Made with a confit, a cream and a meringue with lime and a yellow lemon gel.

Peaches

He made two versions: one with a crunchy appearance, made with a tomato and strawberry jam as a complement and placed on a bed of strawberry jelly and a basil mousse emulsion. The alternative version offered the same crunchy peach but with a core composed of a peach compote.

Red fruit petals

These red fruit petals such as strawberry or raspberry, sold in his London store, look amazing.

Chocolate fondant

Although its appearance does not deceive, it is made of praline nibs, creamy chocolate fondant, cocoa heart covered with dark chocolate mousse. And all gluten-free.

Macadamia nut and vanilla chickpeas

Although they may look like chickpeas, they are actually macadamia nuts with their salted butter caramel, vanilla mousse and macadamia praline.

Almonds

He made several versions of almonds. One of them was toasted almonds with almond praline and fleur de sel, mousse and almond gel.

The cherry

It looks like cherry, but in reality it is much more. Made with a heart of tarragon cherry jelly, topped with a ganache of whipped almonds and Espelette peppers.

Strawberry

Shaped like a strawberry, it consists of basil ganache, a jelly and strawberry compote, plus an almond, strawberry and sesame cream.

Flowers

This flower-like dessert is actually a sweet diamond chocolate paste with cocoa nibs, chocolate nib praline, chocolate cream, flourless chocolate sponge, cocoa gel, whipped chocolate ganache.

Vanilla bean

These “beans” are made of vanilla crunch, vanilla gel, vanilla ganache, fine chocolate coating. Also contains lactose, nuts and eggs.

Golden hazelnut

This Super Golden Hazelnut 2.0., as Grolet called it, is a new version of the previous one. It features crunchy Fleur De Sel Hazelnut Praline, Creamy Salted Vanilla Butter Caramel, Hazelnut Milk Infused Mousse.

Sicilian salted pistachio

It looks like a 100% real pistachio.

Mandarin

Pure mandarin with whipped timut bell pepper ganache, ivory topping, gelatin mass, cream, mixed timut bell pepper, mandarin marmalade, mandarin juice, candied mandarin, fresh mandarin, sour mandarin, 100 g mandarin paste, Timu pepper, among others.
