This is how Jordi Roca prepares hummus, step by step

The iconic chef and pastry chef of the restaurant El Celler de Can Roca now shares this process on Instagram.

The famous tupper… My nephews and nieces collect them, but after several days of repeating, they don’t feel like it. But with the fridge half full, you don’t throw anything away and with these chickpeas Martí and I prepare a hummus that tastes better every day’, says the emblematic post on the social network.


Recipe:

  1. Prepare a vegetable chickpea stew.
    a. Place the chickpeas in a saucepan and once they come to the boil, mash them.
    b. In the same saucepan, emulsify the mashed chickpeas with oil.
    c. Add salt to taste.

  1. Make a parmesan chip to go with it.
    a. Place a layer of grated Parmesan in a hot frying pan.
    b. Brown on one side and do the same on the other side with a spatula.
    c. Allow to cool.

Finally, place the hummus at room temperature on a plate and top with the parmesan chips. Sprinkle with mint and… eat.
