Sushi Shop presents an exclusive collaboration with Albert Adrià

The French brand chooses the chef for its annual Michelin Star collaborative series.

The sushi brand, which is committed to innovation and product quality, now connects its culinary identity with that of the emblematic Catalan chef to design a limited edition that will form part of the restaurant’s menu throughout 2024.

The star product of the partnership is a 21-piece box -priced at €27.90- in which some of his high-end sushi creations can be sampled.

The collaboration displays the avant-garde culinary vision of the chef at the head of Enigma (Barcelona) through the ‘preservation of the values and identity of Sushi Shop’, in Adrià‘s own words, when developing the creative process of these simple pieces without any great technical fuss with which he revisits tradition.

The box includes eight exclusive creations that fuse Asian and Western inspiration, which will be available in Sushi Shop shops and through its own delivery service.

It serves Albert’s interpretations ranging from the ‘Salmon Hako’ with salmon, avocado, ikura, wasabi mayonnaise, tajin spices, aonori (seaweed) or the ‘Spicy Tuna Hako’ with spicy tuna tartar, tuna, sesame oil, marinated tapioca pearls, 7 spices; to the ‘Shisho Nigiri’ made with sea bream, hibiscus powder, umeboshi, shiso, wasabi, sesame oil.

Temaki by You

Beyond that iteration, the collaboration presents a menu structured around temaki, consisting of 15 items.

The chance to play and make your own temakis was too tempting to pass up – fun and quality in equal measure! For this creation, I have come up with several preparations: a guacamole with Japanese flavours, a spicy tuna tartar, a mix of crunchy vegetables and pickles, candied shiitake mushrooms, which everyone can combine as they like with vinegared rice and crispy nori leaves,’ read the notes of this creative fusion of haute cuisine.
