How Dabiz Muñoz prepares (and enjoys) the main dish of El GoXO’s Christmas box

The famous chef has shared the step-by-step of how he prepares and serves this dish. And the truth is that it has made us want to try it.

Any dish that Dabiz Muñoz shares on his networks is capable of whetting anyone’s appetite. The passion with which he lives his work, added to the look of all his dishes, makes everything he cooks go viral. As every Christmas, the best chef in the world launches a lot of products. This year, in the famous El GoXO box, Dabiz Muñoz has included a main dish that consists of French yellow-leg chicken, stuffed with a farce they make with the chicken meat, plus kimchi, foie, bacon and epazote (a super special Mexican herb). This is accompanied by two side dishes: Robuchon-style mashed potatoes and chaufa-style fried rice with Chinese sausage and mushrooms.

To prove that this is a real delicacy, Dabiz Muñoz has shared a video of the ritual that must be followed to prepare and plate the dish. It’s not to be missed.

The chicken comes whole, in the form of a “super juicy meatball”, as the chef points out, and weighs between 1 and 1.4 kg, so it can give 2 to 4 servings. Actually, the stuffed chicken is previously roasted, so he recommends putting it in the oven with a little grill for 15-20 minutes at 220 ºC. A little before it is finished baking, the sauces that accompany the chicken should be heated in the microwave (a minute and a half each): a chicken chili sauce made with purple milk and yellow chili and a sauce of the chicken juices with truffle and red wine.

Once you cut each portion, I know that the chicken is golden brown on the outside and super juicy on the inside. When you plate it, you have to pour a good dose of sauce, first the truffle sauce and then the chili. “An absolute spectacle”, as Muñoz emphasizes. Finally, you also have to add to the dish the Chinese-Peruvian style chaufa rice and the Robuchon-style puree with lots of butter and black pepper. Et voilà!
