In his profiles he posts all his pastry creations, characterized by an incredible and careful aesthetic, in addition to innovating in their preparation and proposing some striking trompe l’oeil, like these ‘quinces’ that we share, which he called “my cocaine”.
Grolet’s success lies in his perfectionism and technical quality when it comes to proposing new desserts.
In addition, it is also characterized by being at the forefront of trends, not only at the culinary level, creating synergies with other chefs, such as chef Jean Imbert, joining cooking formats, giving online courses or even in other sectors. His latest collaboration was with jeweler Nadine Ghosn, to launch a limited edition of 50 galettes des croissants. In one of them, a special bean produced by Ghosn and valued at €6,500 was hidden.
