Cheap recipes for the end of the month

When the end of the month arrives, we look into the fridge wondering ‘what am I going to eat today?’ It’s not the perfect time for going to the grocery store but you want to cook something yummy and eat well. We show you 4 infallible recipes for these days – you’ll love them. Maybe you also want to make them in the first days of the month also, who knows, maybe you start to save some money – once for all!

Strips of pasta with cheese

Ingredients: pasta / butter / eggs / single cream / grated cheese / salt, black pepper and oregano.

How to do it: Cook the strips of pasta and save the water. Put butter in a casserole and let it melt on a low heat and add the pasta. In other recipient beat some egg yolks with the single cream and a few spoons of the water where the pasta was cooked. Put the mix in the casserole – on a low heat – and add the grated cheese. Add a pinch of black pepper and oregano. Violà!

Baked eggs with potatoes and tomatoes

Ingredients: potatoes / thyme / mushrooms / cherry tomatoes / egg / olive oil / salt and black pepper.

How to do it: Cut the potatoes into squares – not very little squares – and boil them. Don’t leave them very soft. Put them in an oven tray – not so big – and also put in it some olive oil and thyme. Season with salt and pepper and leave the tray in the oven during 10 minutes over a strong heat. Remove the potato squares and add the mushrooms and put it in the oven again during 10 minutes.

Take the tray out and make space in the middle of it, crack an egg in this place. Put it in the oven for 4 more minutes. Sprinkle with parsley and serve in the tray itself. Be careful with the heat!

Couscous with vegetables

Ingredients: green pepper / red pepper / zucchini / eggplant / tomatoes / couscous / olive oil / pepper and salt

How to do it: Cut the peppers, the zucchini and the eggplant into small squares. Sauté them in the same pan, but always in this sequence, in order to cook well all of them.

Cook the couscous in a casserole following the instructions. And when it’s done, mix it with the vegetables – that are already cooked. Cut the tomatoes into squares and add them into the pan on a low heat. It will give a lot of flavour and the texture of the couscous would be very light. Season the mix with salt and pepper and move all the ensemble well. Bon appétit!

Chicken with mushroom sauce

Ingredients: Fillet chicken / mushrooms / single cream / onion / white wine / salt and black pepper.

How to do it: Cut the chicken fillet into tiny pieces, season it with salt and pepper and let them steep. Slice the mushrooms and put them in a pan with olive oil on a medium heat. Add the grated onion. When the mix is cooked, add some white wine and move the mix. When the alcohol is evaporated, add the single cream.

In a different pan, cook the fillet chicken. Mix them well with the sauce. Add two shots of white wine and when the sauce become dense, turn off the heat and let it steep. Let the chicken take the flavour of the sauce and let’s eat!
