This is the new KOrto menu that Ikigai Velázquez offers this summer on weekdays

For those of you who Monday through Friday would like to enjoy a short, five-pass version of the Japanese restaurant's menu, take note!

In Japanese, the prefix KO (子) is used to represent the reduced version of a larger object. With this premise, and in the context of the arrival of the heat that corresponds to a season with less appetite, the restaurant Ikigai Velázquez bets to raise a tasting menu in reduced format. Called KOrto, this new proposal is composed of five passes that reflect 100% the culinary technique of chef Yong Wu Nagahira. In addition, this menu will be available from Monday to Friday at lunchtime for a price of 45 €.

And what will you be able to taste at KOrto? The menu includes a starter such as vegetable tempura, three classic nigiris or three fusion nigiris, including hamachi nigiri, butterfish nigiri with sweet miso flambé, marinated sardine nigiri, sundried tomato tapenade and black olives, panko and butter or scallop nigiri with foie gras, eel sauce, Maldon salt and spun egg. As well as a temaki of the day, where the chef will select the best alternative according to the market, with options such as classic tuna, negitoro or ikura with fried egg. The diner will also enjoy a dessert and drink.

Undoubtedly, it is an ideal choice for the summer season. In addition, it is the perfect occasion to taste the French, Asian and Spanish fusion present in the refined technique of Ikigai Velázquez’s chef.
