If we talk about gastronomic variety, the Spanish capital comes to be one of our references: there are flavors from all over Spain and from many parts of the planet. You can find everything, and the hotel and catering offer is always growing.

Recently, new restaurants with different concepts have just opened in the Spanish capital, in kitchens where the fusion of flavors is the main ingredient. Here are the new hot spots you can’t miss. Take note.

Chambao Madrid

The restaurant Chambao Fashion Steak Grill House opened its doors on December 8. It is the first of the Mexican group RosaNegra Group (founded by Eduardo Beaven) in Madrid and specializes in exclusive cuts of meat and seafood. The new restaurant transports you to beautiful Tulum with avant-garde cuisine by executive chef Antonio Madrigal.

Playing Solo

Chef Luis Caballero opens his first restaurant, Playing Solo, which includes a menu with dishes inspired mainly by French, Nordic and Japanese cuisine. It is a very personal project that reflects the experiences lived throughout an outstanding professional career in different kitchens around the world as in D’Stage, Kabuki, Geranium or Can Domo. Here the art of cooking and eating come together to the rhythm of Jazz.

Ticuí

The Mexican group Puntarena opens a new restaurant in the capital called Ticuí. Federico Rigoletti, the chef and creator of concepts such as the Puntarena restaurant, which opened a few years ago at the Casa de México in Spain, says that this new concept celebrates Mexican gastronomy, cocktails, architecture and craftsmanship.

Robata

The Umai Group opens Robata in Madrid, with the concept conceived and opened seven years ago in Barcelona by sushi chef Fabiola Lairet, also creator of Monster Sushi in Barcelona. Robata is a gastronomic proposal based on high quality raw materials and a treatment of fresh products that preserves the essence of traditional Japanese gastronomy and culinary techniques.

Remedios

The Remedios restaurant arrives in Madrid with a firm commitment to traditional cuisine, with a slow-cooked base, where stews and seasonal products are its standard. It shares walls with Queiles, a Navarrese restaurant opened 10 years ago, also owned by businessman Iñaki Galipienzo. Chef Mariana Vieira is at the helm of this traditional restaurant.

Totó e Peppino

This is a restaurant of the Neapolitan pizza maker Salvatore Romano, who after almost 20 years since the opening of his first restaurant in the neighborhood of Las Salesas (with the same name), has just opened this restaurant in the Retiro area. As it should be, his specialty is the unequalled pizzas with long fermentation, and also his ragú. It is a strong cuisine, full of flavor, with direct suppliers from Naples.

BarraCruda

After three years in the neighborhood of Barajas (Calle Bahía de Palma, 8. Madrid), the restaurant, specialized in Raw Food cuisine, BarraCruda, opens a new space in the Municipal Market of Ibiza. This new landing of the chef and businessman José Alberto Zapata, offers raw, semi-raw and low-temperature cooked dishes made with raw materials of the highest quality, using interesting techniques from places like Latin America and Asia: such as tataki, tartare, tiradito, ceviche, etc.
