Oprah Winfrey’s trick for making a creamy pasta without cream

The presenter shared one of her favourite pasta recipes, but without using cream or butter. Take note of the trick to make it creamier and healthier.

Oprah Winfrey has long since adopted a healthier lifestyle by changing her daily diet and giving up certain foods that were not good for her. But that doesn’t mean she has to give up enjoying food or make excessive sacrifices. So he started working with French chef Philippe Chevalier and challenged him to prepare his favourite pasta dish without using butter or cream. The French chef succeeded and here is the recipe with the trick to a creamy and healthier pasta.

Recipe for lemon pasta without butter

If you want to make Oprah Winfrey’s favourite – and healthy – pasta at home, you need to know the chef’s trick for making it tasty and creamy. And watch out, because Chevalier turned to oat flakes to get it just right. The tip is to cook a large quantity of oat flakes, then strain out the starchy, creamy liquid produced by the cooking (much like oat drink). When this liquid is poured into the pasta sauce, it forms a thick texture that is delicious. “I can’t believe it doesn’t have cream in it,” Oprah said when she first tasted it.

Ingredients:

  • Spaghetti
  • 2 tablespoons olive oil
  • Assorted mushrooms
  • Chopped shallots
  • Chopped garlic
  • Chopped fresh thyme
  • Oat flakes
  • Chicken stock
  • Grated Parmesan cheese
  • Lemon zest
  • Chopped chives
  • Chopped basil
  • Peas
  • Lemon juice
  • Salt and pepper

Preparation:

  • Bring water to a boil in a large pot. Add one cup of oats and the chicken stock and cook for 15 minutes.
  • Strain about 1/2 cup of the cooked oatmeal liquid into a bowl and set aside.
  • In a large skillet, add the oil, mushrooms, shallots, garlic and thyme and sauté over medium heat for less than a minute.
  • Then add the grated Parmesan cheese and a little lemon zest. Stir until the cheese is melted.
  • Then add the chives, basil and peas and stir again to mix well.
  • Turn up the heat and add a tablespoon of lemon juice.
  • Then boil the spaghetti and add it to the pan. Stir until the spaghetti is soaked in the sauce. Season with salt and pepper to taste.
