How to prepare patbingsu, Korea’s typical slushy fruit salad recipe

We show you how to prepare this typical Korean snack based on crushed ice, fruits and sugared red beans.

It is considered one of the most traditional Korean snacks. As it contains fruit, condensed milk and crushed ice, in summer it is also very typical to have it as a dessert. Patbingsu or simply bingsu would be something like a slushy fruit salad recipe that is very popular in South Korea. What started as a typical street food has become one of the favorite dishes for Koreans to refresh themselves.

There are different varieties that include ingredients such as ttok -typical Korean rice cake- or knick-knacks. In South Korea, large fast food chains often include it in their menus. Here, we show you how to prepare one of the most traditional versions of patbingsu. It’s very easy!

Patbingsu (o bingsu) recipe

Ingredients:

  • 1 bag of crushed ice
  • 150 ml condensed milk
  • 1 can of sugared red beans
  • 1 diced mango
  • 1 banana
  • 150 g strawberries
  • 2 kiwis
  • A handful of blueberries
  • Ice cream, frozen yogurt or mochis (your choice of flavor)
  • Nuts for toppings, marshmallows or even jelly beans (optional)
  • Mint sprigs for garnish

Preparation:

  • Divide the crushed ice among 4 bowls, placing it in the center of the bowl.
  • Pour the condensed milk over the ice and place in the freezer for a few minutes.
  • Take it out again and add the red beans, mango, diced strawberries and kiwis, plus the blueberries and spread over the bowl.
  • Finally, add the ice cream and the rest of the toppings of your choice and garnish with the mint sprigs.
