Last year, Juana La Loca<\/strong> closed the doors of its famous venue in La Latina unexpectedly. The enigma led us all to question the reason for the closure; whether it would be for good or whether it would return in a renewed form to another venue. Well: mystery solved, the place that housed Juana La Loca has now been replaced by Alto Bardero<\/a><\/strong>, run by the chef duo of Pablo Paternostro and Le\u00f3n Bonasso, while the latter has moved to a new area.<\/p>\n\n\n\n

After opening in 2001, this tavern managed to become a gastronomic reference in the world of pintxos, above all, for its iconic potato and onion confit omelette<\/strong>, considered the best in the world by many, selling around 1,400 units a month.<\/p>\n\n\n\n

The authentic tavern cuisine of Juana La Loca <\/strong>has now returned to the Salamanca neighbourhood. A totally different enclave, but where she continues to serve her successful Basque-inspired gastronomic proposal<\/strong> without artifice, which respects the product and values it.<\/p>\n\n\n

In its new premises, we can once again enjoy its emblematic Betanzos-style potato omelette, along with other pintxos such as its spinach crepe with garlic eels and wild asparagus or its truffled egg confit with marinated pork crackling from C\u00e1diz. The proposal also includes main dishes such as spinach fritters, blue sheep’s cheese, croutons and bacon, and is completed with a dessert section with delicacies such as its carrot, ginger and yoghurt cream tart or its dulce de leche volcano.
