One that <strong>Joan Roca <\/strong>took to the stage at the 25th edition of <strong>San Sebasti\u00e1n Gastronomika<\/strong>, a benchmark culinary symposium that brought together some of the most brilliant minds in the sector, such as chefs Quique Dacosta and Benjam\u00edn Lana.<\/p>\n\n\n\n<p>There, beyond focusing on the importance of <strong>red prawns<\/strong> in Spanish cuisine, Roca shared a key element in his creations: garum de gamba or prawn sauce.
