Located on the 33rd floor<\/strong> of the Torre Emperador Castellana <\/strong>building in Madrid, \u00c9lkar has made history in the past for many reasons. And one of them was for its height, specifically at a prominent distance of 160 m.<\/p>\n\n\n\n

Through its reopening, all the bases and roots of Sergio Ortiz <\/strong>and Be\u00f1at Ormaetxea<\/strong>‘s project are once again coming to the fore, as is its gastronomic proposal based on Mediterranean tradition with a contemporary twist that will now be interpreted by the renowned chef Fran Vicente<\/strong>, praising the raw material and the updated techniques of fresh and sustainable cuisine.<\/p>\n\n\n\n

This benchmark project on the national culinary scene once again pays tribute to classic national recipes, incorporating contemporary twists to emblematic dishes such as its ‘Foie Grass Fundador 18 years accompanied by pepper and cinnamon sponge cake’, its ‘Seasonal stews’ or its ‘Glazed veal sweetbread, kumquat chamoy sauce and aniseed’.<\/p>\n\n\n\n
