{"id":209380,"date":"2023-09-24T15:44:08","date_gmt":"2023-09-24T13:44:08","guid":{"rendered":"https:\/\/www.tapasmagazine.es\/reabre-ibai-el-restaurante-clandestino-de-san-sebastian-y-templo-de-la-cocina-vasca\/"},"modified":"2023-09-24T15:48:05","modified_gmt":"2023-09-24T13:48:05","slug":"ibai-the-clandestine-restaurant-in-san-sebastian-and-temple-of-basque-cuisine-reopens","status":"publish","type":"post","link":"https:\/\/www.tapasmagazine.es\/en\/ibai-the-clandestine-restaurant-in-san-sebastian-and-temple-of-basque-cuisine-reopens\/","title":{"rendered":"Ibai, the &#8216;clandestine&#8217; restaurant in San Sebasti\u00e1n and temple of Basque cuisine, reopens"},"content":{"rendered":"\n<p><strong>Click <a href=\"https:\/\/www.tapasmagazine.es\/reabre-ibai-el-restaurante-clandestino-de-san-sebastian-y-templo-de-la-cocina-vasca\/\">here<\/a> to read the Spanish version.<\/strong><\/p>\n\n\n\n<p>When chef\u00a0<strong>Alicio Garro decided to close the\u00a0Ibai<\/strong>\u00a0restaurant\u00a0a few years ago, he left behind one of the best\u00a0<strong>Basque cuisine restaurants in San Sebasti\u00e1n<\/strong>.\u00a0Since then, those who have passed through there at some point still miss the charisma of that place but above all, the food.\u00a0Their prayers have been heard and, finally,\u00a0<strong>the\u00a0<a href=\"https:\/\/www.7canibales.com\/opinion\/ibai-vuelve-el-mito\/\">Ibai is going to reopen its doors<\/a><\/strong>.<\/p>\n\n\n\n<p>It will be revived by\u00a0<strong>Paulo Airaudo<\/strong>, an Argentine chef with two Michelin stars, but who has lived in San Sebasti\u00e1n for many years, where he learned in the kitchens of\u00a0<strong>Arzak<\/strong>\u00a0and where he opened his first restaurant,\u00a0<strong>Amelia<\/strong>, in 2017.<\/p>\n\n\n\n<p>Now he undertakes a more difficult task if possible, that of\u00a0<strong>being able to restart a place with a unique essence<\/strong>.\u00a0There, Alicio shouted loudly the dishes that were not on the menu, because it varies depending on the season, and the atmosphere was as if you were in the house of some colleagues.<\/p>\n\n\n\n<p>Its raw material was also special.\u00a0<strong>The best fish<\/strong>\u00a0were found by Alicio among the fish offerings of the day and served in Ibai,\u00a0<strong>the cow was &#8220;from there&#8221;<\/strong>\u00a0and the hand of the kitchen (<strong>Juantxo and Isabel<\/strong>) had come to perfect simple dishes until they were elevated to the highest level.<\/p>\n\n\n\n<p>The\u00a0<strong>fish was the jewel in the crown<\/strong>:\u00a0<strong>hake<\/strong>\u00a0in green or koskera sauce;\u00a0candied or battered\u00a0<strong>kokotxas;\u00a0<\/strong>clams with soupy rice;\u00a0elvers;\u00a0Bacalao Al Ajoarriero.\u00a0They also served\u00a0<strong>seasonal vegetables<\/strong>: beans, artichokes, peas, or asparagus.<\/p>\n\n\n\n<p>The reopening will not entail a facelift;\u00a0quite the contrary.\u00a0Alicio Garro will walk through the kitchen to make sure that Airaudo and his team comply with the Ibai tradition.\u00a0<strong>Mart\u00edn Flea<\/strong>\u00a0will be the sommelier, who has already set to work to create an offer worthy of Ibai regulars.\u00a0All this so that the new Ibai can once again be the same as always.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Click here to read the Spanish version.
