It is a homemade pasta type paglia e fieno, green (spinach) and white. From Scotch eggs in Italian sausage with Lardo di Colonnata I.G.P., to French potato gnocchi with Carril clams and bottarga, or a mellow rice with seasonal mushrooms and roasted quail.<\/p>\n\n\n\n<p>It has also included other creations such as choco roe with burnt butter sabayon, wild salmon tartar with yuzu hollandaise and Japanese sansho pepper and nashi (Asian pear) or wild boar cannelloni with Thai red curry sauce and shiitakes.
