Its sweet, acidic taste and the right balance between tequila and triple sec, make it a must in terms of cocktails. But sometimes there is a problem: not everyone likes the salt rim in the final presentation of a margarita. So he decided to create his own version, which he called Salt Air Margarita. What&#8217;s so special about it? Well, instead of using the traditional salt, Jos\u00e9 Andr\u00e9s opts for making a salt foam. Curiously, he discovered this alternative while at sea. Just when the waves were breaking on the rocks, the chef tasted the resulting foam and was fascinated by the salty touch.<\/p>\n\n\n\n<figure class=\"wp-block-embed is-type-video is-provider-youtube wp-block-embed-youtube wp-embed-aspect-16-9 wp-has-aspect-ratio\"><div class=\"wp-block-embed__wrapper\">\n<iframe title=\"Jos\u00e9 Andr\u00e9s&#039; Favorite Margarita | Longer Tables | Chef Jos\u00e9 Andr\u00e9s\" width=\"640\" height=\"360\" src=\"https:\/\/www.youtube.com\/embed\/cZQLJMdZvDk?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe>\n<\/div><\/figure>\n\n\n\n<p>The first time he served his special version of the margarita was at his restaurant Oyamel, in Washington. Now, Jos\u00e9 Andr\u00e9s has shared on <a href=\"https:\/\/joseandres.com\/recipes\/oyamels-salt-air-margarita\/\" target=\"_blank\" rel=\"noreferrer noopener\">his website<\/a> the recipe for this peculiar margarita. We show you how to prepare this original salt foam at home.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">How to prepare Salt Air by Jos\u00e9 Andr\u00e9s<\/h2>\n\n\n\n<h4 class=\"wp-block-heading\">Ingredients:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>120 ml of water<\/li>\n\n\n\n<li>60 ml lime juice<\/li>\n\n\n\n<li>1\u00bd teaspoons sucro emulsifier<\/li>\n\n\n\n<li>1\u00bd teaspoons salt<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">Preparation:<\/h4>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Mix the water and Sucro in a small saucepan.<\/li>\n\n\n\n<li>Heat over low heat until it reaches at least 158 \u00b0C, stirring all the time to activate the Sucro (if you don&#8217;t have a thermometer, it can be cooked until the mixture starts to bubble).<\/li>\n\n\n\n<li>Then, remove from the heat and let it cool in an ice bath.<\/li>\n\n\n\n<li>Once cool, add the lime juice and salt.
