Chef Jorge Losa is in charge of the recipe and its preparation follows the traditional steps. In addition to the quality of the product and the balance of ingredients (60% tripe, 20 of leg and 20 of snout), the most important thing for Losa is the time, as these tripe takes two days to be cooked.
