Dabiz Muñoz-style paellas have become a classic. Every now and then, the chef from Madrid publishes a new paella recipe with a very striking proposal. At Christmas he caused a sensation with his Christmas paella, and now Dabiz Muñoz’s Galician paella has left no one indifferent. The man considered to be the best chef in the world in 2022 prepared a rice dish with total inspiration from Galicia. For this, he used the following ingredients: Grelos, Canarian potato and octopus a feira, smoked De la Vera paprika, Pontevedra volandeira and clarified infusion of Galician broth.

In addition, Munoz himself made the chef’s bite and enjoyed his own recipe while explaining the details of a dish that he defined as a real “spectacle”. Thanks to the crunchy moment of the socarrat, with the creaminess of the potato, the smokiness of the paprika, the sea butter of the octopus…. “Can you ask for more”, asked the chef. Of course, there was no shortage of comments from both Valencians and Galicians about the type of recipe he was sharing.
