If you need inspiration for your spoon dishes with which to combat the winter cold, today we bring you a proposal of José Andrés that is also very easy to prepare and very cheap. It is a cream of peas, an ingredient that we usually have at home with the typical frozen bag. The Asturian chef proposes this soup, among other things, because it can be served either hot or cold, as you prefer. Pea soup recipe

Ingredients:

  • 1 bag of frozen peas (not thawed)
  • 500 ml of water
  • Salt
  • Sherry vinegar
  • Crème fraîche or plain Greek yogurt
  • Chopped nuts (such as pistachios or almonds)
  • Extra virgin olive oil
  • Mint leaves

Preparation:

  • Bring the water to a boil in a saucepan and add a pinch of salt.
  • When it comes to a boil, add the peas and vinegar for 5-7 minutes.
  • Then, remove from the heat and blend until it becomes a smooth puree.
  • If you want to eat it hot, serve immediately in a bowl, adding the cream cheese and nuts.
  • Garnish with a mint leaf and a good drizzle of olive oil.
