The best taco in Spain is served in Castellón (and these are its ingredients)

This taqueria from Castellón won the Spanish Taco Championship. The second place was won by a restaurant in Tarragona and the bronze, in Zaragoza.

It is one of the most emblematic dishes of Mexican gastronomy and in Spain you can increasingly taste traditional recipes as if you were in the Aztec country. This could be seen in the Taco Championship of Spain that was held a few days ago in Madrid, where only 15 locals reached the grand final, after 102 tacos were presented and the best taco went to Castellón.

Through a blind tasting carried out by a jury composed of renowned chefs, the winning taco was finally elaborated by Andrés Salas, chef of the taqueria Los Chamacos, located in Castellón. Thanks to the creation of the Birria taco, which consists of a nixtamalized blue corn tortilla taco, filled with lamb, guajillo chile, pasilla chile, ancho chile and tomato; and accompanied by onion, cilantro, birria broth and pickle sauce.

At Los Chamacos, which has two locations in Castellón, you can also taste other Mexican delicacies such as Sinaloense sea bass aguachile, huitlacoche croquette, Boshito taco or El Michoacano, among other dishes. In the sweet section, they serve original desserts such as El Mezcalito, a mezcal sorbet, smoked orange foam and tajín tuile, or Cajeta dulce de leche ice cream with goat’s milk, coffee sponge cake and chocolate sauce.

Second and third best taco

Completing the podium, the second place went to the cochinita pibil taco prepared by the Amaranto restaurant, located in Tarragona, which makes a homemade Mexican cuisine “market, street, street market, neighborhood party,” as they define themselves.

Finally, the third best taco went to the Nolagras restaurant in Zaragoza, thanks to its original proposal called Taco-Gras, the work of chefs David Lorente and Alejandro Viñal. This taco was composed of a blue corn tortilla with marinated beef tongue made with kamado, smoked sweet potato, raisin and peanut mole sauce and fried pumpkin seeds with chili.
