Recipe of sopaipas cordobesas, the traditional Andalusian dessert

Although this traditional Andalusian dessert is typical of carnival, it is increasingly common to eat it throughout the year. Sopaipas cordobesas are so called because it is a term from Arabic meaning “fried dough”. They are thin slices of fried dough that serve as an accompaniment to breakfasts, snacks or desserts and are usually eaten with chocolate. It is a very simple recipe and, if you want to try something different, here we show you the step by step.

Ingredients:

  • 600 g flour
  • 1 sachet Yeast
  • 1/2 l Water
  • 1 tablespoon salt
  • Olive oil

Preparation:

  • Heat a saucepan with water and salt. When it dissolves, remove from the heat and add the yeast. Gradually add the flour little by little, stirring until the dough acquires consistency.
  • Take it out of the bowl and knead it by hand. Put it on a plate and let it rest for two hours. Form small balls and stretch each one to cut them in a rectangular shape.
  • Put abundant oil in a frying pan and fry the portions. Leave them on a plate with absorbent paper to remove excess oil. And enjoy them with a chocolate, for example.
