Recipe for homemade panellets, the typical sweet of All Saints’ Day

Also called sweet of All Saints, panellets are one of the most typical sweet snacks of these dates, specifically on November 1, which is celebrated the feast of All Saints. Traditional in the Catalan area, and also in the Valencian Community and the Balearic Islands, this homemade recipe is super easy to make and the result is addictive. Below, we leave you the step by step recipe to prepare homemade panellets.

How to make classic homemade panellets

Ingredients:

  • 600 g almonds or pine nuts
  • 3 eggs
  • 500 g powdered almonds
  • 100 g sweet potato
  • 500 g sugar
  • 75 g egg white
  • Grated lemon zest

Preparation:

  • Cook the sweet potato and mash it in a bowl.
  • Add sugar and grated lemon zest, and mix well until a compact dough is formed.
  • Add egg yolk and stir well to dry. Finally, add the powdered almonds and mix until well blended.
  • Let it rest in the refrigerator for about a day, wrapping it in a damp cloth.
  • After this time, form small oval balls with the dough, coat them with egg and then with the pine nuts or almonds.
  • Before putting them in the oven, paint the panellets with a little egg.
  • Put them on a tray and bake them at 180 ºC for 15 minutes until golden brown. Let them cool and serve.
