Surely with the cold that has settled these days, you feel like preparing more stews and spoon dishes. As our gastronomy is full of traditional dishes, today we highlight one that cannot be missing in your weekly menu. This is potatoes Rioja style, a grandmother’s recipe that, besides being easy to prepare, is delicious and very tasty. Without great artifice, you will get a finger-licking preparation. Potatoes Rioja style recipe

Preparation:

  • First chop the onion very finely. In a large saucepan, pour a drizzle of extra virgin olive oil and add the onion, sautéing it for about 15 minutes over low heat.
  • Chop the garlic cloves finely and add to the pan.
  • Meanwhile, cut the chorizo into 2-3 cm pieces and fry them adding a pinch of sweet paprika. Stir well to integrate everything.
  • Add the potatoes, peeled and cut into pieces and mash them (to release the starch).
  • Add the bay leaves and pour water until the potatoes are covered.
  • Turn up the heat and, once it starts to boil, lower it and add the pulp of the choricero peppers.
  • Cook for 30 minutes, stirring from time to time until you see that the potatoes are done. Add salt and cold water if necessary.
