Noelia Tomoshigue, elected best pastry chef in Spain: here’s what you can eat there

The owner of Monroebakes (Getafe) has won the Pastelero Revelación 2023 award at Madrid Fusión. Second place went to Irene Lluch, from the restaurant Son Jaumell, and third place to Arnau Casadevall, from Divinum.

The sixth edition of the pastry contest of Madrid Fusion, which was held yesterday in the auditorium of Pavilion 14 of Ifema, already has a winner: Noelia Tomoshigue, of Monroebakes (Getafe, Madrid), is the Revelation Pastry Chef 2023. The Sevillian, of Japanese parents, won yesterday thanks to her ‘Furusato’ (a dessert whose main ingredients are Sudachi from Japan and chestnut honey from Andalusia) one of the most prestigious awards of the great gastronomic congress, which consolidates her as the best pastry chef in our country.

She is 32 years old and not even one year has passed since she opened her business, located at number 21, Avenida de la Paz, in Getafe. But in just six months, his work has not left anyone indifferent. Not even Pedro Sánchez, who a few months ago wrote a tweet saying that Tomoshigue is “an example of someone who pursues his dream and manages to make it come true, with talent and effort”.

The pastry chef’s bet? To unite Spanish and Japanese roots with French pastries. Or in other words: Japanese sweets in soul, Spanish in tradition and French in technique. Among her star products are the white chocolate cake, the mango cake or the matcha cheesecake, without detracting from the mille crepes or the roll cakes, of course.

For its part, the jury of the contest (which was chaired by Paco Torreblanca, best master pastry chef in the world 2022) decided to award second place to Irene Lluch, from the restaurant Son Jaumell, and third place to Arnau Casadevall, from Divinum. This was not the case for the other three participants: Áser Martín, from Tabaiba restaurant; Álvaro Holgado, from Chef Alia Pastry Shop, and Laura Suárez Nuevos, from Habatonka Factoría Dulce.
