Maria Lo’s warm salad recipe you need for this winter

We love all the elaborations of the gaditana and this salad in particular is great to combine with the Christmas excesses.

To cope with the Christmas excesses, it is also advisable to opt for lighter meals to balance. We have found the perfect option in a recipe shared by chef María Lo, winner of ‘Masterchef 10’. The Cadiz-born chef proposes a warm winter salad that is simple, light, tasty and easy to make. Based on seasonal ingredients and a delicious yogurt and peanut butter sauce, take note of how to prepare it because you will lick your fingers.

Warm winter salad recipe by María Lo

Ingredients:

  • 1/4 kale
  • 10-12 brussels sprouts
  • Vegetables of the cabbage family
  • 1/2 pomegranate
  • Handful of walnuts
  • Fennel
  • Extra virgin olive oil
  • Salt
  • Peanut cream
  • For the sauce and
  • 3 tablespoons Greek yogurt
  • A splash of lime juice
  • Salt
  • For the yogurt sauce:
    • 3 tablespoons Greek yogurt
    • A splash of lime juice
    • Salt

Preparation:

  • First strip and clean the kale (keeping 10-12 leaves). Cut the stem in half and then in half again, in julienne strips.
  • Clean the brussels sprouts, drain and also cut into julienne strips. Do the same with the rest of the vegetables of your choice.
  • Put all the vegetables in a large bowl and season with a good splash of olive oil and salt. Mix well and spread on a baking tray on parchment paper.
  • Bake at 170 ºC for 15 minutes, so that the vegetables are toasted and al dente.
  • In the meantime, open the pomegranate and remove the seeds from inside. Set aside.
  • To prepare the yogurt sauce, mix the yogurt, lime juice and salt. You can add a little garlic if you like.
  • Put the vegetables in a bowl and add the pomegranate, chopped walnuts, yogurt sauce and peanut butter and enjoy as a unique and nutritious dish!
