This is Madrí Madre, the new tavern by Berasategui where you can eat for 30 euros

Martín Berasategui has returned to Madrid in style. Just a month ago he settled in the capital with the new proposal of El Club Allard, with Jose Maria Goñi at the helm of the kitchen. And now he has opened Madrí Madre, a Madrid tavern located at Ferraz, 8, which promises to become the new must-visit place for lovers of traditional portions and appetizers, with the unique touch of a chef with twelve Michelin stars. And all at a price within reach of all budgets. We reveal all the details below.

Madrí Madre opens its doors on April 14 and its premise is clear: to pay homage to the traditional taverns of the capital. The Donostia-born chef has surrounded himself well for this new project. The head chef of the tavern is Iñaki Rodaballo, a chef from Vitoria with a long career and several gastronomic awards behind him, and whose recipes will share the menu with those of Berasategui.

A traditional tavern with haute cuisine

When a restaurant has the seal of a chef like Berasategui, you might think that the average ticket will not be affordable for all budgets. But on this occasion, the incredible culinary proposal of Berasategui and Rodaballo will be around 30-35 euros per diner. “We want everyone to be able to enjoy this fun menu, ideal for sharing and very democratic, in a spacious place next to Plaza de España”, says Berasategui himself.

Thus, the extensive and tasty menu will include snacks with the Berasategui signature, ideal for sharing, such as the red shrimp roll with cabbage salad and homemade brioche, a juicy sandwich with mustard mayonnaise, celery and apple vinegar, a squid sandwich, a portion of tripe or the unmissable gilda a la donostiarra, based on Cantabrian anchovies, peppers and olives.

For its part, Rodaballo proposes its eye-catching Candy Crunch Bravas, a revision of this Madrid classic, in which vegetable slices, like crunchy candies, wrap a core of mashed potatoes and sauce. “I come to Madrí Madre to have fun, because as the great Sacha says, if only the customers have a good time, it’s no good to me. We bring rich, tasty dishes, within everyone’s reach. And always, as the name of the restaurant says, with an eye on those mothers who have given us their love through good food”, explains the chef from Vitoria.

Meat and fish will also be available

Other appetizers available will be Berasategui’s infallible Russian salad or the roasted bell pepper, tuna belly and hard-boiled egg salad, created by Rodaballo, who was inspired by the recipe his mother used to make when they went to the swimming pool. There will also be individual potato omelettes and other classics such as croquettes (Iberian ham and ricotta with spinach).

In the meat section, options such as veal cheek cooked for 12 hours, a juicy txuleta of Galician blonde cow, matured for 60 days or the Porky Porky, a pork rib and bacon stew with chickpeas that Iñaki Rodaballo serves to eat in one bite. While the marine part will have delicacies such as the classic hake in green sauce with Berasategui’s technique, or the fun touch of Chip’s & Ron, where Iñaki proposes a rum jelly topped with potato foam and grilled baby squid, which is crowned with vegetable chips.

Nor should we forget the sweet menu, with traditional desserts but with a gourmet twist: from Berasategui’s torrija to the three-cheese tart or chocolate bread. And on the wine side, there will be an extensive wine list, mainly Spanish, with wines from the D.O. of Madrid taking center stage. And, of course, a lot of beer, and very well poured.
