How to prepare zalamandroña, the typical Granada recipe of Mozarabic origin

If you have never heard of this dish, maybe it is a good time to try it. Zalamandroña is a typical recipe from Granada, especially from the towns of Guadix and Huéneja, and it has Mozarabic origins. It is a kind of salad with cod that, in the time of the Arabs, was served to welcome guests. If you want to know how to prepare this difficult to pronounce recipe, take note of the step by step because it is very easy to make at home.

Zalamandroña recipe

Preparation:

  • First, cook the cod. To do this, in a saucepan of boiling water, add the crumbled cod and the bay leaf. Boil for one minute and remove from the heat, letting it finish cooking with the heat.
  • Meanwhile, chop the tomatoes, onion and peppers and place them on a baking tray. Preheat the oven to 200ºC and then bake for 20-25 minutes, sprinkling olive oil on top.
  • Once roasted, remove from the oven and let stand.
  • Finally, plate the vegetables with the crumbled cod, add the black olives and dress with a good drizzle of oil.
