How to prepare diplomatic cream, a basic pastry recipe

Today we bring you a recipe that will delight the sweet tooth. This is the diplomatic cream, a basic recipe in pastry that is achieved by preparing a pastry cream and a whipped cream. Recipe of diplomatic cream

Ingredients:

  • 500 ml milk
  • 75 g sugar
  • A pinch of salt
  • 60 g cornstarch
  • 15 ml vanilla extract
  • 6 large egg yolks
  • 6 g powdered gelatin
  • 200 g whipping cream

Preparation:

  • Heat the milk in a saucepan to bring it to a boil.
  • Meanwhile, in another bowl, beat the egg yolks and add the sugar and continue beating vigorously. Add the cornstarch and continue stirring until you get a homogeneous mixture.
  • When you remove the milk from the heat, add half of the milk to the bowl of eggs and stir well while adding the rest of the milk, stirring constantly.
  • Then, bring the cream to a boil, stirring constantly, for a couple of minutes. Remove from the heat.
  • Next, hydrate the gelatin and add to the cream while it is boiling.
  • Transfer the cream to a chilled container. You can seal the surface with clarified melted butter. Finally, cover the container with plastic wrap and store in the refrigerator.
  • To prepare the whipped cream, whip the cream in another bowl.
  • When the pastry cream is cold, mix the two creams, gently adding the cream.
  • And now you will have the diplomatic cream ready to taste.
