Preparation:

  • The preparation is very simple. You only need to mix in a bowl all the spices, together with the pepper, salt and olive oil. Mix well so that all the ingredients are perfectly integrated.
  • Coat the turkey tenderloin well with the mixture and then store it as is in an airtight bag (or vacuum-pack it).
  • Reserve in the refrigerator overnight (or about 10-12 hours), so that everything marinates well.
  • Afterwards, you will have to proceed with the cooking. You can opt for several ways:
  • Do it in a bain-marie with the turkey inside the bag. To do this you need to heat a casserole at a temperature of more than 60ºC. Then you introduce the bag with the turkey and leave it at that temperature for about 70-75 minutes.
  • Another alternative is to prepare it in the oven. Preheat the oven to 200ºC and place the turkey breast in a suitable dish, previously lined with paper. If the breast is about 1 kg, let it bake for 75 minutes (turning it over halfway through baking), checking to prevent it from drying out too much.
  • Let it cool well. In the case of the bain-marie, you can put the bag in a bowl with water and ice.
  • Finally, fillet in thin slices to enjoy your homemade turkey cold cuts. It can keep in the refrigerator for up to 5 days.
