From El Lince to A’Barra: the route with the 10 restaurants in Madrid where to try exclusive Swiss cheese tapas

Until March 15, 10 prestigious restaurants in the capital will offer different tapas made with Swiss cheese Le Gruyère AOP, named the best cheese in the world in 2022, including ravioli or cannelloni, but also pizza, hamburger or risotto.

Cheese lovers have a unique opportunity to taste exclusive tapas prepared by some of the best chefs in the capital, with Le Gruyère AOP cheese as the protagonist. In total, 10 restaurants have joined forces to offer the gastronomic cheese route called Madrid Experiences by Le Gruyère AOP and organized by Quesos de Suiza.

Until March 15, cheese lovers will be able to visit restaurants such as El Lince, A’Barra, Roostiq, Triciclo or Fortuny, among others, to enjoy original creations based on the cheese considered the best cheese in the world in 2022. In addition, diners who taste different tapas will be able to participate in a raffle for a spectacular wheel of Le Gruyère AOP cheese, along with an evening for two in one of the participating restaurants, valued at 300 €.

Which restaurants are participating and what tapas do they offer?

To pay tribute to this emblematic variety of Swiss cheese, 10 prestigious chefs from the capital have joined forces to create dishes that bear the unmistakable stamp of their gastronomic proposal, but with the inimitable touch of Le Gruyère AOP. These are all the participating restaurants and the varied delicacies they have included in their menus for this special occasion:

  • Chef Javi Estévez has prepared ravioli with oxtail, béchamel, mushrooms and Le Gruyère AOP at El Lince.

  • A’Barra, led by Sergio Manzano, offers leeks, Le Gruyère AOP emulsion, pancetta and spring cured yolks.

  • At the Triciclo restaurant, chef Javier Goya proposes pickled quail cannelloni with Le Gruyère AOP béchamel sauce.

  • Mariano Galangco Gadingan’s restaurant Miga Cana participates with a tapa of fried Le Gruyère AOP with creamy quince jelly and pistachio.

  • Meat lovers should go to Miguel Crespo’s La Carnaza to try his Galician blonde burger with mushrooms, truffle sauce and Le Gruyère AOP fondue.
