Pedroche’s cheesecake recipe

Ingredients:

  • 500 g cream cheese
  • 250 g cream 35% fat
  • 5 eggs
  • 100 g
  • 80 g Parmesan cheese
  • 200 g sugar
  • Salt
  • 10 g flour
  • Crackers (for the base)
  • Butter (for the base)

Preparation:

  • Put all the ingredients (except the cookies) in a bowl and beat well until everything is homogeneous.
  • Then, add the flour and mix again to integrate well.
  • At the same time, crush the cookies to a powder and mix little by little with the melted butter to form a paste that will be the base of the cake.
  • Spread the cookie base (1 finger thick) in the mold and then pour the cheese mixture.
  • Preheat the oven to 190 ºC on the warm setting with fan and bake the cake for 30 minutes.
  • After this time, switch the oven to broil at maximum power for 3-4 minutes, so that the surface is gratinized.
  • Let stand for about 3 hours in a cool place or in the refrigerator.
