Madrid Fusion is always a meeting place where prestigious chefs and people from the gastronomy sector exchange reflections on cuisine and advance new projects. This is the case of Dabiz Muñoz. The chef from Madrid participated in the second day of the congress where he had an interesting talk with Benjamín Lana, director of Madrid Fusión, and Jose Carlos Capel, gastronomic critic and president of this culinary event.

During the conversation, Muñoz once again revolutionized the main stage by reflecting on his creative process and revealing details of his new projects, the recent opening of StreetXO in Dubai and the long-awaited new DiverXO at La Finca. “I spend all day cooking because creativity is also trained. If you spend all day trying new things and studying, your creativity increases,” the chef revealed.

A creative process that Muñoz and his team take very seriously, working hard until they find the perfect elaboration they want to offer. “We make between 50 and 60 new dishes a year and that means accumulating a lot of creative fears. Changing things when people like them requires you to be very brave,” he confessed during the talk.

In addition, Dabiz Muñoz took advantage of his appearance to advance new information about what the fourth version of his DiverXO will be like, the biggest project he is going to face in his career so far. The chef defined it as “an amusement park for me and for the customer”. An unparalleled experience that, in order to achieve it, Muñoz has revealed is going to require an astronomical investment of between 12 and 14 million euros. “We have no savings because we reinvest everything we have on a day-to-day basis,” he confessed, while stressing that to achieve this he had surrounded himself with the best possible team.

A challenge with which he intends to surprise the diner. “We want to redefine 100% of DiverXO’s philosophy,” he said. To do this, his idea is to maintain “the same level of excellence, creativity and uniqueness, but with the feeling that there is another chef behind it”. Thus concluded his participation, leaving everyone present with the hype of what is to come with DiverXO 4.0.
